Ajmer is one of the five locations in Rajasthan where The Akshaya Patra Foundation has its 5S and GMP standardised centralised kitchen. This kitchen was established in July 2016 and was inaugurated by Rajasthan’s Chief Minister Vasundhara Raje.

Vegetables are procured daily and stored in cold room. Raw materials are stored as per standards of ISO 22000. To ensure that only fresh ingredients are being used for cooking meals, FIFO (First in first out), and FEFO (First expiry first out) methods are employed.
The cauldrons and other utensils in the kitchen are sanitised by using chlorine water along with steam sterilisation.
Regular monitoring of cooking temperature and maintenance of cooking time is ensured by the production staff throughout the cooking process.
To ensure and maintain safety of food, standard processes like Quality Policy formation and ISO 22000 surveillance is in process. The kitchen strictly implements GMP, GHP in its operations.
The safety of the kitchen is monitored at regular intervals. A fire evacuation plan has been displayed in the kitchen with written instructions of the steps to be taken in the event of fire as well as the measures to be taken for calling the fire brigade. There is a fire extinguisher kept in the area too.
All staff members are provided with personal protective gears such as boots, face masks, hard hats, ear plugs, respirators, gloves, safety harnesses and the like as a precautions and food safety measures.
All the materials are procured only after the quality inspection as per the raw material specifications of Akshaya Patra’s quality management system.
