Puri, the land of ancient temples, religious sanctuaries, architectures, monuments, and golden beaches, where Lord Jagnatha reigns in majesty, houses the large and complex kitchen facility of The Akshaya Patra Foundation. The kitchen is located at Balagandi and was established in 2006. There are centralized and decentralized kitchens in Puri.
Centralised Kitchen
There is one centralised kitchen that serves a set of schools located around the unit. The double-storeyed kitchen stands in a radius of 28 km.
Decentralised Kitchen
The school locations where there is improper road connectivity, decentralised kitchens are set up. These kitchens are run by the women Self-Help Groups and are monitored by Akshaya Patra representatives to ensure that safe.

The innumerable number of utensils is sanitised by steam sterilisation.
In the kitchen, safety measures are implemented to ensure the safety of staffs. Fire extinguishers have been installed and the employees are trained to use them regularly in intervals of 4 to 5 months. There is an emergency exit track in case of any danger.
At pre-production level, Quality Executive checks the raw material quality and finds the standardised supplier.
At the production time, quality executive checks CCP.
At post production level, monitoring hygiene practice of packing & transportation is done. At school level storing of cooked food, serving & feeding are being observed randomly.
