When food is prepared in huge quantities, retaining the freshness of the raw materials is a task. The raw materials are purchased as per the requirement, thrice in a week and are retained in dry stores so that they would not be spoiled by moisture.
The equipment’s and other utensils in the kitchen are sanitised by hot water 80% to remove microbial agents and bacteria.
As an enormous kitchen with large number of kitchen staffs, the safety management of the kitchen is clearly monitored. In case of any hazards, a fire evacuation plan has been displayed. Fire extinguishers are available at critical points. Safety incidences are reviewed with Senior management every day.
Personal protective equipment’s Apron, boots, face masks, Hand Gloves are provided as a precaution to eliminate hazards that causes ailments.
During pre-production all the utensils are sterilised with hot water, chlorination of vegetables is done to remove microbes and germs, after which they are washed and cleaned.
Cooking is done in equipment’s which is made up of SS 304. During production the cooking temperature is monitored, Cooking time, temperature monitoring, equipment’s sterilisation, batch identification is given due importance.
After the cooking process, kitchen is cleaned thoroughly. The vessels are loaded into the washed delivery vans and dispatched.
Quality inspection of raw materials is done as per FSSAI specification and AGMARK specification.
